High Protein, Vegan Meal

What now? 





It can get really boring, eating a limited diet, eating the same thing over, and over... and over... again. 

My family is able to eat a lot of things I am not able to enjoy. Like anything with dairy or corn. Those are the biggest offenders. Gluten has to be eaten in limited (very limited) quantities. 

If you’re looking for a meal that’s vegan friendly, but packed full of protein - you may like this one. 


Let’s call it... Spinach Goodness 






Here’s the recipe:

  1. Warm a skillet with your favorite oil 
  2. Enter the spinach. I use about 1-2 cups of frozen, organic. You can definitely use fresh. 
  3. One serving of your favorite protein (beyond meat strips, tofu etc.)
  4. When the spinach and protein are  starting to thaw, add a few splashes of Coconut Amino’s
  5. Toasted flax seeds 3TBS
  6. Nutritional Yeast 2 TBS
  7. After it’s done, I like to top it with a sprinkle of some Vegan Shreds. So, so good, and super filling. 

As a little extra treat, I added a side of organic Vegan Mac and Cheese, along with a bite of dark chocolate. 

This meal is packed full of protein, just over 30 g
It’s not full of junk or GMO’s 
It’s super filling 
It’s good for you. 

I call that a win-win.
